Gooey Chocolate Nut Butter Brownies

Ingredients

  • 2 flax eggs (2tbsp ground flax + 5tbsp H2O)
  • 3/4 cup chopped dates (soaked in hot water for 30 mins)
  • 1 super ripe banana
  • 1/2 cup oat milk
  • 1/4 cup almond butter
  • 1 cup rolled oats, blended into a flour
  • 1/3 cup cacao powder
  • 2 tbsp brown sugar
  • 2 tsp baking powder
  • pinch of sea salt
  • chocolate chips (I used @traderjoes semisweet chocolate chips)

Preparation

  1. Preheat oven to 350F. Set the dates to soak and make the flax egg, let sit for 5 minutes.

  2. In a blender, blend together the flax egg, drained dates, banana, oat milk and almond butter until smooth.

  3. In a separate bowl, mix the oat flour, cacao powder, sugar, baking powder and salt.

  4. Add the dry ingredients to the wet and blend. Fold the chocolate chips into the batter.

  5. Pour into a greased tin and bake for 30 minutes. Let it cool for another 30 minutes then devour the goodness.
