Vegan Italian Scarpaccia Bake

Ingredients

Batter

  • 1 cup all purpose flour
  • 1/3 cup corn meal (not corn flour like in the video!)
  • 2 tbsp olive oil
  • 1 cup water
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Vegetables

  • 2-3 zucchinis
  • 1-2 onion

Seasonings

  • Extra virgin olive oil
  • 1/2 tsp salt
  • fresh basil

Preparation

  1. Cut the onions and zucchini and onion into thin slices and saute in a pan for around 10-15 minutes on medium heat. Set aside and prepare the batter.

  2. Combine flour, corn flour, olive oil and water.

  3. Mix and then add the vegetables.

  4. Season with salt and pepper.

  5. Pour everything to a generously oiled baking tray and use baking paper to prevent sticking.

  6. Pour some more corn flour and olive oil on top.

  7. Bake at 200C/400F for 35-40 minutes until golden brown and crunchy and enjoy.
