Vegan Peanut Butter Chocolate Cake
Ingredients
- 2 cups all purpose flour
- 1/2 cup cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups almond milk
- 3/4 cup coconut sugar
- 1/2 cup coconut or almond yogurt
- 1/4 cup peanut butter
Toppings
- 2 tablespoons cacao powder
- 2 tablespoons melted coconut oil
- 2 tablespoons agave nectar
- 1 tablespoon peanut butter powder
- 2-4 tablespoons water
Preparation
Preheat oven to 350°F (180°C).
Whisk the dry ingredients until well combined.
In a different bowl, whisk all of the wet ingredients.
Stir the wet ingredients into the dry mixture.
Mix to make a smooth batter and transfer to a greased or lined cake pan.
Bake for 30 to 40 minutes or until a toothpick inserted in the center comes out clean.
For the melted chocolate topping, combine 2 tablespoons cacao powder, 2 tablespoons melted coconut oil, and 2 tablespoons agave nectar.
For the peanut butter topping, combine 1 tablespoon peanut butter powder and 2-4 tablespoons water.
Top the cake with the prepared chocolate and peanut butter mixtures.
