Vegan Peanut Butter Chocolate Cake

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups almond milk
  • 3/4 cup coconut sugar
  • 1/2 cup coconut or almond yogurt
  • 1/4 cup peanut butter

Toppings

  • 2 tablespoons cacao powder
  • 2 tablespoons melted coconut oil
  • 2 tablespoons agave nectar
  • 1 tablespoon peanut butter powder
  • 2-4 tablespoons water

Preparation

  1. Preheat oven to 350°F (180°C).

  2. Whisk the dry ingredients until well combined.

  3. In a different bowl, whisk all of the wet ingredients.

  4. Stir the wet ingredients into the dry mixture.

  5. Mix to make a smooth batter and transfer to a greased or lined cake pan.

  6. Bake for 30 to 40 minutes or until a toothpick inserted in the center comes out clean.

  7. For the melted chocolate topping, combine 2 tablespoons cacao powder, 2 tablespoons melted coconut oil, and 2 tablespoons agave nectar.

  8. For the peanut butter topping, combine 1 tablespoon peanut butter powder and 2-4 tablespoons water.

  9. Top the cake with the prepared chocolate and peanut butter mixtures.
