Vegan Potato Wedges with Sriracha Mayonnaise
Ingredients
- 3 cups chopped potatoes
- Salt, pepper, ground chili (1 tsp each)
- 1 tbsp garlic infused olive oil (optional)
Sriracha mayonnaise
- 3 tbsp soy protein or coconut yoghurt (no inulin)
- 1 tbsp tamari sauce
- 1 tbsp sriracha
- 1/3 cup macadamias (best if soaked first)
Preparation
Cut the potatoes and spread them on a baking sheet and season with salt, pepper and chili. Add olive oil if you want to use it.
Bake at 180°C or 350°F for about 20 minutes.
Meanwhile, blend the remaining ingredients to make the sriracha mayonnaise.
Remove the potatoes from the oven and serve with the sriracha mayonnaise
