Vegan Potato Wedges with Sriracha Mayonnaise

Ingredients

  • 3 cups chopped potatoes
  • Salt, pepper, ground chili (1 tsp each)
  • 1 tbsp garlic infused olive oil (optional)

Sriracha mayonnaise

  • 3 tbsp soy protein or coconut yoghurt (no inulin)
  • 1 tbsp tamari sauce
  • 1 tbsp sriracha
  • 1/3 cup macadamias (best if soaked first)

Preparation

  1. Cut the potatoes and spread them on a baking sheet and season with salt, pepper and chili. Add olive oil if you want to use it.

  2. Bake at 180°C or 350°F for about 20 minutes.

  3. Meanwhile, blend the remaining ingredients to make the sriracha mayonnaise.

  4. Remove the potatoes from the oven and serve with the sriracha mayonnaise
