Crispy Pan Fried Potatoes

Ingredients

  • 6-7 potatoes
  • 3 tablespoons margarine
  • 2 tablespoons oil
  • Favorite herbs, to taste
  • Salt, to taste

Preparation

  1. Peel and cut the potatoes to bite-sized pieces.

  2. Cook the potatoes for 5-7 minutes without overcooking.

  3. Test the potatoes with a fork to ensure they are slightly firm but easy to pierce.

  4. Drain the cooked potatoes and let them cool.

  5. In a bowl, add the cooked potatoes and 3 tablespoons of margarine; stir well to coat.

  6. Heat 2 tablespoons of oil in a skillet.

  7. Add the potatoes to the skillet.

  8. Cook until the potatoes turn golden and crusty.

  9. Chop the herbs and sprinkle them on the potatoes.
