Vegan Spring Fruit Tart
Ingredients
Dough
- 160g flour
- 80g powdered sugar
- 45g starch
- 10g almond flour
- 90g vegetable butter
- 2 tablespoons water
- 1/2 tsp vanilla powder
Filling
- 1 cup coconut water
- 1 cup vegetable milk
- 1/2 tsp pink pytaja powder
- 2/4 cup marple syrup or sugar
- 1 tbsp cornstarch
- 1 tbsp agar agar powder
Preparation
Preheat the oven to 180 degrees top and bottom heat.
Knead all the ingredients for the dough, press into a tart pan and bake for about 20 minutes.
Let cool and start with the filling.
In a small saucepan, mix the coconut water, vegetable milk, marple syrup or sugar and pink pytaja powder.
Boil this briefly over medium heat.
Add the cornstarch and agar agar powder and bring to a boil.
Pour the mixture into the cooled tart and let it sit in the fridge for at least 2 hours.
