Vegan Tomato Basil Quiche
Ingredients
- 1 pack just roll shortcrust pastry (ensure vegan)
- 1 pack @cauldronfoods tofu
- 1 white onion
- 2 cloves garlic
- 2 tbsp nutritional yeast
- 200g mixed baby tomatoes
- Big handful of fresh basil leaves
- 2 tbsp unsweetened soya milk
- Salt & pepper
Preparation
Preheat the oven to 190C.
Chop onion and garlic and sauté until soft.
Line a tart tin with the pastry, poke holes in the base with a fork, cover with parchment and fill with baking beans, and bake for 10 minutes.
Put the garlic, onion, tofu, nutritional yeast, and soya milk in a processor and blitz until smooth.
Add salt and pepper to taste.
Cut the tomatoes in half and chop the basil.
Stir the basil into the quiche mixture, pour into the tart crust, and smooth over with a spatula.
Lay the tomatoes on top.
Bake for a further 25-30 minutes until just set.
It can be eaten hot, warm, or cold, and makes a delicious snack.
