5-Ingredient Vegan Protein Pudding

Ingredients

  • 400ml water
  • 2 tbsp psyllium husks
  • 1 scoop vegan protein
  • 30g peanuts or peanut butter
  • 1 ripe banana
  • 2 tbsp lemon juice or apple cider vinegar
  • seasoning (cinnamon, cacao and ginger)

Toppings

  • frozen blueberries
  • cacao powder
  • sugar-free vegan choc drops

Preparation

  1. Soak 2 tbsp psyllium husks in 400ml water, whisk and let it sit for 2 hours so it gets a jelly-like texture.

  2. Put all ingredients in a blender and blend for 1 minute.

  3. Put the mass in a bowl and let it sit in the fridge for 1 hour.

  4. Throw the pudding from one bowl to another so it is upside down and use toppings as you desire.
