Eggplant and Black Bean Balls in Rich Tomato Sauce

Ingredients

  • eggplants: 2 medium, chopped
  • black bean: 1 cup, cooked
  • garlic: 3 cloves
  • onion: 1, chopped
  • bread crumbs: 3 tbsp
  • nutritional yeast: 1 tbsp‌ (optional)
  • oregano: 1 tbsp
  • chili flakes: 2 tsp
  • chia egg (1tbsp chia seed with 3tbsp water)
  • parsley: 100g
  • salt and pepper: as required

Preparation

  1. Pre heat oven on 180c

  2. Put chopped eggplants, onions and garlic on a tray, drizzle olive oil, salt and pepper and put it in oven for 30 minutes

  3. When cooked let it cool

  4. In a food processor combine all the ingredients until it mixed

  5. Form the mixture like a ball and put them in oven tray and cook it for 20 minutes

  6. You can serve it with tomato sauce, pasta, bread or as a snack
