Eggplant and Black Bean Balls in Rich Tomato Sauce
Ingredients
- eggplants: 2 medium, chopped
- black bean: 1 cup, cooked
- garlic: 3 cloves
- onion: 1, chopped
- bread crumbs: 3 tbsp
- nutritional yeast: 1 tbsp (optional)
- oregano: 1 tbsp
- chili flakes: 2 tsp
- chia egg (1tbsp chia seed with 3tbsp water)
- parsley: 100g
- salt and pepper: as required
Preparation
Pre heat oven on 180c
Put chopped eggplants, onions and garlic on a tray, drizzle olive oil, salt and pepper and put it in oven for 30 minutes
When cooked let it cool
In a food processor combine all the ingredients until it mixed
Form the mixture like a ball and put them in oven tray and cook it for 20 minutes
You can serve it with tomato sauce, pasta, bread or as a snack
