Vegan Potato Gratin with Cheese and Herbs

Ingredients

  • 1kg potatoes (firm kind)
  • 1 onion
  • 500ml cooking cream (oat or soya)
  • 2 garlic cloves
  • salt
  • black pepper
  • parsley (thinly diced or frozen)
  • 100-200g grated vegan cheese

Preparation

  1. Preheat oven to 225C

  2. Peel and thinly slice 1kg potatoes (choose a firm kind) and thinly slice 1 onion

  3. In a greased baking dish, place the sliced potatoes and onion

  4. In a bowl, add 500ml cooking cream, 2 crushed garlic cloves, salt, black pepper, and thinly diced parsley (or use frozen), then mix

  5. Add 100-200g grated vegan cheese to the mixture and stir

  6. Pour the mixture over the potatoes and onions, ensuring they are covered; add more cooking cream if necessary

  7. Cover the baking dish with foil and bake in the oven for 45 minutes

  8. After baking, remove foil and top with extra parsley and black pepper
