Vegan Gluten-Free Breakfast Hash

Ingredients

  • 2 potatoes, shredded (white or sweet potatoes can be used)
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 6 cloves garlic, minced
  • 2 to 3 large kale leaves, shredded
  • Pinch of salt

Preparation

  1. Begin by preheating your oven to 375F, and rinse your shredded potatoes

  2. Pat them dry, and toss them with your salt and pepper

  3. Spread out your potatoes on a baking sheet, and bake these for 10 minutes

  4. Toss your baked potatoes with minced garlic, and spread them back on the mat to be baked for 5 minutes more

  5. Slice or shred your kale, and begin to saute in a pan with water and a pinch of salt to cook

  6. Once softened, set aside to cool

  7. Plate up your baked potatoes, serve with kale, and enjoy
