Oven-Baked Meatballs and Potatoes

Ingredients

  • 300-350 grams ground meat
  • 1 onion
  • 2 cloves garlic
  • 5-6 sprigs parsley
  • 1 teaspoon baking powder

Vegetables and sauce

  • 2 large potatoes or 3 small potatoes
  • 6 cherry tomatoes
  • 7-8 green peppers
  • 1 tablespoon tomato paste
  • 1.5 cups water
  • salt
  • red pepper flakes

Preparation

  1. Place the ground meat in a bowl and add the blended onion, garlic, and parsley.

  2. Add the spices, knead the mixture, and let it rest in the refrigerator for 15 minutes.

  3. Divide into 16 pieces, shape into balls, and lightly fry in a non-stick pan on both sides.

  4. Arrange the meatballs around the edges of a baking dish.

  5. Slice the potatoes and place them in the center of the baking dish.

  6. Add halved cherry tomatoes and green peppers around the edges.

  7. Pour the prepared mixture of tomato paste, water, and spices over the dish.

  8. Cover with parchment paper.

  9. Bake in a 200-degree oven until cooked through.
