Fig Leaves Green Oil
Ingredients
- 50g fig leaves
- 150g neutral oil
- 2-3g salt
Preparation
Remove the center of the fig leaves to eliminate the milky substance.
Blend the prepared fig leaves with neutral oil and salt until the mixture reaches 65°C, or pre-heat the oil to 65°C before blending if necessary.
Continue blending for 2-3 minutes.
Strain the mixture through a fine sieve or cheesecloth into a frozen bowl to preserve the bright color.
Tips
Use this oil to enhance dishes like butter, emulsions, or umami sauces for added flavor and color.
It works well for creating marbled effects in sauces or as a base for innovative preparations such as green tacos.
