Vegan Nut-Free Mac and Cheese

Ingredients

  • 1 cup cooked sweet potatoes
  • 1 1/4 cups coconut milk, light works!
  • 1 cup nutritional yeast
  • 1 Tbsp light miso paste
  • 1 clove garlic

Preparation

  1. Blend all ingredients well in a high speed blender until smooth.

  2. Test to see whether the sauce is the texture you like best.

  3. For a thinner sauce, add more coconut milk and blend again.

  4. Cook pasta according to package instructions

  5. Toss with pasta and enjoy.
