Cheesy Vegan Pumpkin Pasta

Ingredients

  • 200g butternut pumpkin
  • 80g coconut milk
  • 1/2 piece of garlic
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp sambal olek
  • 2 tbsp nutritional yeast
  • 1 cup almond milk
  • Pasta

Preparation

  1. Cut the pumpkin into squares and cook in the oven for 40 minutes at 200 degrees Celsius.

  2. In a blender, add all the ingredients and blend until smooth.

  3. Cook pasta according to package instructions

  4. Serve with the sauce.
