Cheesy Vegan Pumpkin Pasta
Ingredients
- 200g butternut pumpkin
- 80g coconut milk
- 1/2 piece of garlic
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/4 tsp sambal olek
- 2 tbsp nutritional yeast
- 1 cup almond milk
- Pasta
Preparation
Cut the pumpkin into squares and cook in the oven for 40 minutes at 200 degrees Celsius.
In a blender, add all the ingredients and blend until smooth.
Cook pasta according to package instructions
Serve with the sauce.
