Creamy Vegan Cheese Pasta

Ingredients

  • 250g pasta
  • Pinch salt

Sauce

  • 75ml truffle oil
  • 400ml oat milk
  • 15g nutritional yeast
  • 4 cloves garlic
  • 1/4 tsp cracked black pepper
  • 1/2 tsp salt
  • 1 tsp smoked paprika
  • 1/4 tsp dried parsley
  • 1/4 tsp dijon mustard
  • 2 tbsp plain flour
  • 120g grated vegan cheese

Preparation

  1. Bring the pasta to a boil in a pot of water with a pinch of salt.

  2. Mince and gently fry the garlic

  3. Using a whisk or a blender, add all the sauce ingredients except the vegan cheese and mix until smooth.

  4. Add the sauce mixture to a pot and place on low heat, adding the grated vegan cheese until melted.

  5. Drain the cooked pasta, then add the cheese sauce and mix until coated.
