Easy Gluten Free Sundried Tomato Pasta Sauce

Ingredients

  • 1 can white beans, drained and rinsed
  • 1/2 cup sundried tomato in oil, with half in oil
  • 1 clove garlic
  • 2 Tbsp tomato paste
  • Handful fresh basil
  • Small handful coriander seeds
  • 1 tsp cumin
  • 1 tsp salt
  • 1/4 cup hot water (from the pasta) + plus if needed

Preparation

  1. Blend all until very smooth.

  2. Serve with gluten-free pasta of your choice.

  3. Make extra servings so you have dinner ready for the next day and just heat it up.
