Easy Vegan Chickpea Curry with Coconut and Spices
Ingredients
- 1 1/2 tbsp garam masala, ground
- 1 tbsp ginger, minced
- 2 cup tomato passata
- 1/2 cup coconut milk (full fat)
- 460g chickpeas, drained
- Brown rice
- Red cabbage
- Lime
- Coriander
Preparation
Cook your rice
Cook spices and water until a paste forms
Add the rest of the curry ingredients and let simmer for 10 minutes
Serve with brown rice, lime, cabbage and coriander
