Easy Vegan Chickpea Curry with Coconut and Spices

Ingredients

  • 1 1/2 tbsp garam masala, ground
  • 1 tbsp ginger, minced
  • 2 cup tomato passata
  • 1/2 cup coconut milk (full fat)
  • 460g chickpeas, drained
  • Brown rice
  • Red cabbage
  • Lime
  • Coriander

Preparation

  1. Cook your rice

  2. Cook spices and water until a paste forms

  3. Add the rest of the curry ingredients and let simmer for 10 minutes

  4. Serve with brown rice, lime, cabbage and coriander
