Slow Cooker Enchilada Orzo Comfort Food

Ingredients

  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of corn
  • 1 can of black beans
  • 1 (4.5 oz) can of green chilies
  • 1 cup of orzo pasta
  • 2 cans of red enchilada sauce or 500ml of homemade
  • 2 cups vegetable broth
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • A pinch of pepper

Preparation

  1. Dump all ingredients into the crockpot

  2. Cook on high for 2-3 hours until most of the moisture has been absorbed

  3. Finish with avocado, cilantro, and a squeeze of lime
