Slow Cooker Enchilada Orzo Comfort Food
Ingredients
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of corn
- 1 can of black beans
- 1 (4.5 oz) can of green chilies
- 1 cup of orzo pasta
- 2 cans of red enchilada sauce or 500ml of homemade
- 2 cups vegetable broth
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp chili powder
- A pinch of pepper
Preparation
Dump all ingredients into the crockpot
Cook on high for 2-3 hours until most of the moisture has been absorbed
Finish with avocado, cilantro, and a squeeze of lime
