Air Fryer Silverside Fish Sandwich
Ingredients
- 24 silverside fish
- 6 French bread rolls
- 1 cup unprepared flour
- 2 eggs
- 1 tablespoon mustard
- Salt, pepper, and cumin to taste
- 2 tablespoons mayonnaise
- Generous amount of criollo sauce
For the mayonnaise
- 1 egg
- 1 tablespoon mustard
- 1 tablespoon ground garlic
- Juice of 1 lemon
- Oil as needed
For the criollo sauce
- 1 onion cut into feathers
- 1 tablespoon salt
- Juice of 2 lemons
- 1 chopped limo chili
- 1 handful chopped cilantro
Preparation
Prepare the mayonnaise by whisking together egg, mustard, garlic, and lemon juice, then gradually add oil while whisking until emulsified and thickened.
Make the criollo sauce by combining onion, salt, lemon juice, chopped limo chili, and chopped cilantro; mix well and let it marinate for at least 15 minutes.
Season the silverside fish with salt, pepper, and cumin to taste.
Beat the 2 eggs in a bowl and place the flour in another shallow dish.
Dip each fish fillet in the beaten eggs, then coat evenly with flour.
Preheat the air fryer to 200°C (400°F).
Place the coated fish in the air fryer basket in a single layer and cook for 10-15 minutes until golden and cooked through, shaking the basket halfway through for even cooking.
Lightly toast the French bread rolls if desired.
Assemble the sandwiches by placing the fried fish on the bread, then add mayonnaise and criollo sauce to taste.
Serve immediately for best flavor and texture.
