Air Fryer Focaccia Sandwich with Roasted Vegetables

Ingredients

Focaccia

  • 500g flour
  • 8g salt
  • 2 tbsp oil
  • 3g dry yeast
  • 450ml room-temperature water
  • Olive oil

Vegetables

  • Bell pepper
  • Onion
  • Courgette
  • Oil
  • Salt
  • Pepper

Fillings

  • Pesto
  • Prosciutto
  • Ham
  • Mortadella
  • Rocket
  • Tomato
  • Mozzarella

Preparation

  1. In a bowl, combine flour, salt on one side, yeast on the other, add oil and water, and mix to form a sticky dough. Let it rise in the fridge for 12-24 hours or at room temperature until doubled in size.

  2. Place the risen dough in a greased tray and let it rise again for about 2 hours. Drizzle with olive oil, gently press the surface with fingertips, and add toppings such as garlic powder, black pepper, and sea salt.

  3. Preheat the air fryer and bake the focaccia at 200°C for 25 minutes.

  4. Season bell pepper, onion, and courgette with oil, salt, and pepper, then cook in the air fryer at 180°C for 15 minutes.

  5. Slice the focaccia and assemble the sandwich by adding pesto, prosciutto, ham, mortadella, rocket, tomato, mozzarella, and the roasted vegetables.

Tips

  1. This sandwich is ideal for a summer picnic and can be prepared using a PFAS-free air fryer for better cooking options.
