Broccoli and Cheddar Twice Baked Potatoes

Ingredients

  • 6 russet potatoes
  • 1 large head of broccoli
  • 1 cup sharp cheddar cheese
  • 2 tbsp butter
  • 2 tbsp mayo
  • Salt, pepper and chili flakes (optional)

Preparation

  1. Rub potatoes with a little oil, sprinkle with sea salt and bake for 1 hour at 400.

  2. Meanwhile, steam the broccoli for a few minutes and then loosely chop.

  3. Remove potatoes and let them cool.

  4. Slice potatoes in half lengthwise.

  5. Scoop out the middle into a large bowl and mix with butter and mayo until smooth, season generously with salt and pepper.

  6. Mix in the broccoli and cheddar.

  7. Stuff the mixture back into the potato shells.

  8. Sprinkle with remaining cheese and bake for an additional 15 minutes.

Notes

  1. This dish can be prepped ahead and is great for hosting events.
