Broccoli Tofu Salad with Miso Dressing
Ingredients
- 1/2 a head of broccoli
- 1/2 a pack of @cauldronfoods tofu
- 1/4 of a red onion
- 1/2 a red chilli
- 1 lemon
- 1 tsp black & white sesame seeds
Miso dressing
- 2 heaping tsp white miso paste
- 1 tsp rice wine vinegar
- 1 tsp maple syrup
- 4 tsp sesame oil
- 1/2 lemon, juiced
- 1-2 tsp tamari
- Water to loosen
Preparation
Drain the tofu and leave it in the marinade for 10 minutes.
Using a box grater or the shredding blade on a processor, turn the broccoli into rice.
Slice the onion and squeeze about a tablespoon of lemon over it with a good pinch of salt, leave for about a minute and then lightly pinch until it goes bright pink.
Heat a frying pan and fry the tofu on each side for about 4-5 minutes each until caramelised and delicious.
Meanwhile, steam the broccoli for about 2 minutes and then dress with lemon juice, season with salt and a quick drizzle of sesame oil.
Serve the tofu on top along with the onion, sesame seeds and some chopped chilli.
