Broccoli Tofu Salad with Miso Dressing

Ingredients

  • 1/2 a head of broccoli
  • 1/2 a pack of @cauldronfoods tofu
  • 1/4 of a red onion
  • 1/2 a red chilli
  • 1 lemon
  • 1 tsp black & white sesame seeds

Miso dressing

  • 2 heaping tsp white miso paste
  • 1 tsp rice wine vinegar
  • 1 tsp maple syrup
  • 4 tsp sesame oil
  • 1/2 lemon, juiced
  • 1-2 tsp tamari
  • Water to loosen

Preparation

  1. Drain the tofu and leave it in the marinade for 10 minutes.

  2. Using a box grater or the shredding blade on a processor, turn the broccoli into rice.

  3. Slice the onion and squeeze about a tablespoon of lemon over it with a good pinch of salt, leave for about a minute and then lightly pinch until it goes bright pink.

  4. Heat a frying pan and fry the tofu on each side for about 4-5 minutes each until caramelised and delicious.

  5. Meanwhile, steam the broccoli for about 2 minutes and then dress with lemon juice, season with salt and a quick drizzle of sesame oil.

  6. Serve the tofu on top along with the onion, sesame seeds and some chopped chilli.
