Creamy Cheesy Mushroom Gnocchi Bake

Ingredients

  • 300g mushrooms
  • 1 shallot
  • 5 cloves of garlic
  • 175ml double cream
  • 200ml veg stock
  • 50g cheddar cheese
  • 1 tbsp Nutritional yeast
  • 1 tsp smoked paprika
  • 2 tbsp chopped chives
  • 1 pack of gnocchi

Preparation

  1. Roughly cube the mushrooms and fry with a dash of salt in a dry pan until the water has evaporated, then add a little olive oil.

  2. Add the shallots and fry for 5 minutes.

  3. Add garlic and smoked paprika, and fry for another minute.

  4. Pour in cream, cheese, stock, and nutritional yeast, mix well.

  5. Add gnocchi and combine.

  6. Sprinkle over breadcrumbs and bake in the oven at 190C for 20 minutes.
