Cheesy Broccoli Pasta Bake

Ingredients

  • 1 head broccoli
  • 1/2 cauliflower
  • 200-300g pasta
  • 1 tablespoon oil
  • 2 heaped tablespoons flour
  • 350ml milk
  • Water as needed
  • 50g grated cheese
  • 2 teaspoons mustard
  • Black pepper to taste
  • Mixed herbs to taste
  • Additional cheese for topping
  • Breadcrumbs or puffed rice cereal for topping

Preparation

  1. Chop 1 head of broccoli and 1/2 cauliflower and cook in a pan.

  2. In another pan, cook 200-300g pasta.

  3. Make a roux by pouring 1 tablespoon oil into a pan and mixing in 2 heaped tablespoons flour to form a paste.

  4. Add 150ml milk and mix until smooth, then add 200ml milk and heat on low heat, stirring until thickened. Add water to achieve a single cream consistency.

  5. Add 50g grated cheese, 2 teaspoons mustard, black pepper, and mixed herbs.

  6. Mix the pasta, vegetables, and sauce together and spoon into an ovenproof dish.

  7. Top with cheese, breadcrumbs, or puffed rice cereal and cheese for crunch.

  8. Bake at 180°C fan for 20-30 minutes until golden on top.

Tips

  1. Take care not to leave the sauce on the heat too long to avoid burning the pan.

  2. Serve on its own or with a side salad.
