Cauliflower and Broccoli Soup
Ingredients
- 1 head cauliflower
- 1 head broccoli
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 tablespoons flour
- 4 cups water or broth
- 1 teaspoon salt
- 1 teaspoon cumin
- 1/2 teaspoon black pepper
Preparation
Using a vegetable grater, grate the cauliflower and broccoli into small pieces.
In a pot, heat the oil and stir the onion until it wilts, then add the cauliflower and broccoli and stir well for a few minutes to sauté the vegetables and develop flavor.
Add the flour, salt, cumin, and black pepper, then add the water or broth, and stir to mix.
Cover the pot and simmer on low heat until the vegetables are cooked, then serve.
