Traditional Turkish Boiled Chicken Stew

Ingredients

  • 6-7 chicken drumsticks
  • 2 potatoes
  • 1 carrot
  • 4-5 tablespoons olive oil
  • 10 shallots
  • 4 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Sauce

  • Juice of half a lemon
  • 1 teaspoon flour
  • 1 cup water

Preparation

  1. Place the drumsticks in a pot and add enough water to cover. Cook until slightly tender.

  2. In a separate pot, add the oil and sauté the onion and garlic. Cut the carrots into long strips and the potatoes into large cubes, then add them to the pot and stir.

  3. Add the drumsticks to the pot along with salt and pepper. Add water to cover, cover the pot, and cook until the vegetables and chicken are tender.

  4. In a bowl, mix the lemon juice, flour, and water for the sauce.

  5. Take a ladle of the cooking liquid and add it to the sauce mixture, stir quickly to temper, and let it cool slightly. Then add the sauce to the pot and stir well.

  6. Cook for another 1-2 minutes. Garnish with parsley and serve.
