Turkish Yogurt Meatball Soup

Ingredients

  • 1/2 kg ground meat
  • 3 tablespoons rice
  • 1 onion
  • 1 clove garlic
  • 1 egg
  • Black pepper
  • Salt
  • 1 tablespoon flour (for coating meatballs)
  • 2 medium potatoes
  • 1 carrot

Sauce

  • 3 tablespoons yogurt
  • 1/2 lemon juice
  • 1 egg yolk
  • 2 tablespoons flour

Topping

  • 1 teaspoon mint
  • 2 tablespoons olive oil

Preparation

  1. Soak the washed rice in hot water for half an hour or parboil it if short on time

  2. Grate the onion and garlic into the ground meat

  3. Add the rice, egg, and spices, then knead the mixture

  4. Spread one tablespoon of flour on a tray and form walnut-sized meatballs, coating them by shaking the tray

  5. Heat oil in a pot and add cubed potatoes and carrots, sauté for one to two minutes, then add water and salt

  6. When the vegetables are half-cooked, add the meatballs and continue cooking

  7. For the sauce, whisk all sauce ingredients until smooth

  8. Add some soup liquid to the sauce to temper it, then slowly stir the sauce into the soup

  9. Boil for a couple of minutes and turn off the heat

  10. Heat the mint in oil and add it to the dish

  11. Garnish with parsley and prepare for serving
