Traditional Turkish Yogurt Soup

Ingredients

  • 2 cups yogurt
  • 1 egg
  • 1 tablespoon flour
  • 1 liter cold water
  • 1 tablespoon dried mint
  • 1/2 cup orzo
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt

Preparation

Mixture

  1. Add yogurt, egg, and flour to a pot and mix well. Then add 1 liter of cold water and stir until smooth.

Heating

  1. Turn on the heat and stir continuously until the soup boils.

Cooking

  1. Once the soup boils, remove the pot from heat.

Orzo sauté

  1. In a separate pan, heat olive oil and butter, add orzo and sauté until browned. Add dried mint and sauté for 10 more seconds.

Combining and finishing

  1. Add the sautéed orzo to the soup and stir. Cover and cook for another 13 minutes, stirring occasionally. Once orzo is cooked, turn off the heat and add salt, then stir.

Tips

  1. Keep stirring during heating to prevent the soup from curdling. Add salt at the end in yogurt-based soups.
