Kutahya Tarhana Soup

Ingredients

  • 1 cup fine bulgur
  • 1 cup hot water
  • 1/2 cup tarhana
  • 1/2 cup flour
  • 1 grated small onion
  • 1 grated garlic clove
  • 1 tablespoon tomato paste
  • 1/2 teaspoon salt
  • 1 teaspoon red pepper flakes
  • 1 teaspoon mint
  • 2 tablespoons butter
  • 3 tablespoons vegetable oil
  • 1 tablespoon tomato paste
  • 1 teaspoon mint
  • Yogurt, to serve
  • Red pepper flakes cooked in butter, for garnish

Preparation

  1. Heat the vegetable oil and butter in a pot over medium heat.

  2. Add the grated onion and garlic, and sauté until softened.

  3. Stir in the tomato paste and cook for 1 minute.

  4. Add the bulgur, tarhana, flour, salt, red pepper flakes, and mint; mix well.

  5. Pour in the hot water and bring to a boil.

  6. Reduce heat, cover, and simmer for 15-20 minutes until the bulgur is tender.

  7. Serve hot with yogurt and garnish with red pepper flakes cooked in butter.

Notes

  1. This soup is similar to mantı but has a more unique flavor.

  2. It uses a summer vegetable-rich tarhana made from a family recipe.
