Turkish Braised Beef Stew
Ingredients
- 800 grams lean diced beef
- 400 grams pearl onions
- 10 cloves garlic
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 tablespoon tomato paste
- 1 teaspoon vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 bay leaf
Preparation
Wash the lean diced beef thoroughly in plenty of water and dry with paper towels.
Heat the olive oil in a deep pot. Add the diced beef and cook on high heat until it releases and absorbs its own juices.
Add enough hot water to cover the beef and continue cooking on medium heat with the lid off.
Peel the pearl onions and garlic and leave them whole.
When the beef is tender, add tomato paste, pearl onions, garlic, vinegar, salt, black pepper, and bay leaf, and stir.
Add hot water to cover by about a finger's width and continue cooking on low heat. Add butter occasionally to enhance flavor and consistency.
Serve hot with the sauce when the onions and garlic are soft.
Tips
Soak pearl onions in lukewarm water beforehand to easily peel them. Cook on low heat without stirring too much to prevent onions and garlic from breaking apart.
Garlic and bay leaf add a unique aroma; optionally add rosemary. You can include root vegetables like potatoes and carrots if desired. Prepare faster in a pressure cooker by adding all ingredients raw.
