Spiced Cauliflower and Meat Stew

Ingredients

  • 1 kilogram meat
  • 1 head cauliflower, cut into large florets
  • 3 cups tomato juice
  • 2 tablespoons tomato paste
  • 6 cloves garlic, sliced
  • 1 tablespoon cumin
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 large onion, chopped
  • 2 tablespoons corn oil

Preparation

  1. Heat water in a pot, add meat pieces, bay leaves, cinnamon stick, and onion, bring to a boil, then strain and save the broth.

  2. Heat 2 tablespoons corn oil in a pot, add chopped onion and stir well, then add meat pieces and stir with onion, add cumin, salt, and black pepper, and stir to combine flavors.

  3. Add tomato juice, tomato paste, and sliced garlic, then stir to mix with the meat.

  4. Add cauliflower florets and reserved broth, then cook on medium heat for about 20 minutes until tender.
