Tender Beef Tas Kebab

Ingredients

  • 1 kg diced beef
  • 3 tablespoons vegetable oil
  • 1 tablespoon butter
  • 1 chopped onion
  • 1 teaspoon tomato paste
  • 2-3 tablespoons tomato puree or grated tomato
  • 3 medium potatoes
  • Salt
  • Black pepper
  • Vegetable oil for frying potatoes

Preparation

  1. Ensure the meat is at room temperature to maintain the pot's heat.

  2. Heat the pot and add the vegetable oil, then heat it.

  3. Add the beef and sear on high heat until browned.

  4. Reduce heat to low, cover, and cook until the meat releases and reabsorbs its juices.

  5. When juices are nearly absorbed, cook uncovered for a bit longer.

  6. Add the chopped onion and sauté for 5-10 minutes.

  7. Add the tomato paste and tomato puree, and sauté for another 5 minutes.

  8. Add enough boiling water to cover the meat (about 1.5-2 cups) and bring to a boil.

  9. Reduce heat to low, cover, and cook until the sauce thickens.

  10. When little water remains, season with salt and pepper, and remove from heat.

  11. Cut potatoes into large cubes and fry in hot oil until golden.

  12. Serve the fried potatoes with the meat stew.
