Uzbek Beef and Vegetable Pilaf

Ingredients

  • 500 grams beef cubes
  • 1 large onion
  • 3 carrots
  • 3 cups rice
  • About 1 cup beef broth
  • Salt
  • About 1 teaspoon black pepper
  • 3 tablespoons sunflower oil
  • 2 tablespoons butter

Optional

  • A pinch of saffron or turmeric

Preparation

  1. Boil the meat in a pressure cooker for about 10 minutes.

  2. Cut the carrots into long strips.

  3. In a large pan, heat the sunflower oil and sauté the carrots until soft.

  4. Add the cooked meat and chopped onion.

  5. Sauté until the onions are caramelized.

  6. Add the rice, salt, butter, and black pepper, and sauté well.

  7. Add the beef broth and hot water using the standard pilaf ratio, then cook until the water is absorbed.

Tips

  1. Optionally add a pinch of saffron or turmeric for color and flavor.
