Stuffed Leeks with Rice and Meat
Ingredients
- 5-6 leeks
- 1.5 cups rice (200ml cup)
- as much minced meat as desired
- 1 tablespoon tomato paste
- 1 tea glass olive oil
- 1 teaspoon salt
- 1 teaspoon chilli flakes
- 1 teaspoon sumac
- 1 teaspoon black pepper
Sauce
- 1 tablespoon tomato paste (preferably tomato)
- 2 cups water (400ml)
Preparation
Clean and prepare the leeks by removing tough outer layers and cutting them into suitable pieces for stuffing.
In a bowl, mix the rice, minced meat, tomato paste, olive oil, salt, chilli flakes, sumac, and black pepper to create the filling mixture.
Stuff the leek pieces with the filling and roll them up securely.
Combine the tomato paste and water to make the sauce.
Place the stuffed leeks in a pot and pour the sauce over them.
Cook on low heat for 60 minutes, checking the water level occasionally and adding more if necessary to keep it from drying out.
