Meatless Bulgur Dumpling Soup

Ingredients

Bulgur balls

  • 1 egg
  • 1 tea glass fine bulgur
  • 1 tea glass semolina
  • 1 tea glass flour
  • 1 tablespoon tomato paste
  • Salt
  • Black pepper
  • Red pepper flakes
  • Mint
  • 1 tea glass hot water for wetting bulgur

Soup broth

  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil
  • 2 cloves garlic (optional)
  • 1 tablespoon grape vinegar
  • 1 teaspoon salt
  • 1.5 liters hot water

Preparation

  1. Soak the bulgur and semolina with 1 tea glass of hot water.

  2. Add egg, tomato paste, flour, salt, black pepper, red pepper flakes, and mint, then knead with wet hands to form marble-sized balls.

  3. Coat the balls with flour by placing them in a tray with flour and shaking.

  4. In a pot, heat olive oil and tomato paste.

  5. Add cold water, bring to a boil, then add the meatballs.

  6. Add grated garlic, grape vinegar, and salt, then boil for another 5 minutes.

  7. Turn off the heat, add chopped parsley if desired, let rest for 10 minutes, and serve.

Tips

  1. This dish cooks quickly because the bulgur is pre-soaked.
