Meatless Bulgur Dumpling Soup
Ingredients
Bulgur balls
- 1 egg
- 1 tea glass fine bulgur
- 1 tea glass semolina
- 1 tea glass flour
- 1 tablespoon tomato paste
- Salt
- Black pepper
- Red pepper flakes
- Mint
- 1 tea glass hot water for wetting bulgur
Soup broth
- 1 tablespoon tomato paste
- 2 tablespoons olive oil
- 2 cloves garlic (optional)
- 1 tablespoon grape vinegar
- 1 teaspoon salt
- 1.5 liters hot water
Preparation
Soak the bulgur and semolina with 1 tea glass of hot water.
Add egg, tomato paste, flour, salt, black pepper, red pepper flakes, and mint, then knead with wet hands to form marble-sized balls.
Coat the balls with flour by placing them in a tray with flour and shaking.
In a pot, heat olive oil and tomato paste.
Add cold water, bring to a boil, then add the meatballs.
Add grated garlic, grape vinegar, and salt, then boil for another 5 minutes.
Turn off the heat, add chopped parsley if desired, let rest for 10 minutes, and serve.
Tips
This dish cooks quickly because the bulgur is pre-soaked.
