Hearty Chicken Soup with Orzo

Ingredients

  • 2 chicken thighs
  • 1 large grated carrot
  • 1 onion
  • 2-3 garlic cloves
  • 2 tablespoons flour
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 cup orzo
  • 2 liters homemade chicken broth
  • juice of 1 lemon
  • a handful of parsley
  • salt
  • black pepper
  • red pepper flakes

Preparation

  1. Boil the chicken in a pot until tender, then strain the broth and set it aside

  2. After the chicken cools slightly, shred the meat into bite-sized pieces

  3. Heat the oils in the pot and sauté the finely chopped onion

  4. Add the grated carrot and stir, then add the flour and cook until fragrant

  5. Pour in the chicken broth and stir quickly to prevent lumps, then add the orzo and cook over medium heat until tender

  6. When the orzo is soft, add salt, black pepper, red pepper flakes, shredded chicken, and garlic

  7. Bring to a boil, add the lemon juice, boil for a minute, and remove from heat

  8. Stir in the finely chopped parsley and serve

Notes

  1. You can use 1 liter chicken broth and 1 liter water instead of all chicken broth if desired
