Chicken Broth Soup with Vermicelli

Ingredients

  • 1 chicken breast
  • Olive oil
  • 1 small onion
  • 1-2 cloves garlic
  • 2-3 medium carrots
  • 2 tablespoons flour
  • 1 large tea glass vermicelli
  • Water (including broth from boiled chicken)
  • Salt and black pepper
  • Dill or parsley

Preparation

  1. First, boil the chicken until cooked.

  2. While the chicken is boiling, chop the onions into small cubes.

  3. In a pot, add olive oil and sauté the onions and crushed garlic.

  4. After sautéing a bit, add the grated carrots and continue sautéing together.

  5. Then, add the flour and sauté for a little longer.

  6. Gradually add the broth from the boiled chicken and regular water while stirring to avoid lumps.

  7. Add the water by eye until the desired consistency is reached.

  8. Once it starts boiling, add the vermicelli and cook until soft.

  9. At this stage, add salt and a bit of black pepper.

  10. Then, add the shredded boiled chicken breast.

  11. Just before turning off the heat, add the finely chopped dill or parsley.

  12. Serve the soup hot.

Tips

  1. Squeeze plenty of lemon and sprinkle black pepper on top for extra flavor.
