Indonesian Clear Spinach Soup

Ingredients

  • 1 bunch spinach
  • 1/2 carrot
  • Water as needed

Spices

  • 5 shallots
  • 3 cloves garlic
  • 1 finger-sized piece of fingerroot
  • Salt to taste
  • Sugar to taste
  • Seasoning to taste

Preparation

  1. Prepare the spinach by picking the leaves, soaking in salted water for 30 minutes, washing, and draining.

  2. Cut the carrot as desired.

  3. Smash the fingerroot.

  4. In a pot, add water and spices together.

  5. Bring to a boil.

  6. Add the carrot and cook until soft.

  7. Add the spinach and cook briefly.

  8. Adjust the seasoning to taste and serve.
