Creamy Peanut Butter Curry Pasta
Ingredients
- 1 lb spaghetti noodles
- 1/2 cup smooth peanut butter
- 1 tablespoon grated ginger
- 14 oz canned coconut milk
- 4 cloves garlic
- 2 tablespoons soy sauce or aminos
- 1 teaspoon curry powder
- 1/2 cup pasta water
Preparation
Cook the spaghetti to al dente in salted water and reserve 1/2 cup of water before draining.
Whisk together the sauce ingredients in the pot used to cook the pasta.
Toss the noodles into the sauce and add desired vegetables.
Tips
Top with a drizzle of chili oil for extra flavor, if desired.
