Easy Vegan Veggie Fried Rice
Ingredients
- 2 tbsp neutral oil of choice
- 3 cloves garlic, minced
- 1 red onion, sliced
- 2 medium carrot, chopped
- 160g shelled, frozen edamame
- 2 large handfuls kale, chopped
- 1 package @palmini_official hearts of palm rice or 2 cups cooked, cold rice
- 2 tbsp tamari
- 1 tbsp dark soy sauce
- 1/2 tsp toasted sesame oil
- 1 tsp maple syrup
- salt and pepper, to taste
- 2 spring onions, sliced
- sesame seeds
- avocado, sliced
Preparation
In a wok or frying pan, over medium-high heat, heat oil and add garlic and onion. Cook for a few minutes and then add carrot. Season with salt and pepper. Cook until veggies have a bit of colour.
Add edamame and cook for a few minutes. Stir in kale and cook until it begins to wilt and then add @palmini_official rice.
Add tamari, dark soy sauce, sesame oil and maple syrup. Stir and continue to cook on medium heat.
Adjust seasoning according to personal preference. Divide into two bowls, garnish with sesame seeds and sliced spring onion. Serve with avocado slices.
