Festive Fudgy Mince Pie Brownies

Ingredients

Wet mix

  • 2/3 cup apple puree
  • 170g dark chocolate, melted
  • 2 chia or flax eggs
  • 1/2 cup coconut sugar
  • 3 tbsp mylk of choice (I used Rebel Kitchen chocolate milk)
  • 1 tsp vanilla extract

Dry mix

  • 1/2 cup spelt flour (wholegrain or white)
  • 1/2 cup oat flour
  • 2.5 tbsp cacao powder
  • 1/2 tsp baking powder
  • Pinch salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger

Add-ins

  • 400g mince pie filling (I used @meridianfoods Mince Pie Filling)
  • 1/2 cup walnuts, chopped

Preparation

  1. Preheat oven to 180°C

  2. Mix together the wet ingredients in a bowl

  3. In a separate bowl, mix together the dry ingredients

  4. Combine the wet and dry mixtures until just mixed

  5. Fold in the mince pie filling and chopped walnuts

  6. Pour the batter into a prepared tray and bake for 20-25 minutes or until set

  7. Allow the brownies to cool

  8. Decorate by painting shapes with edible gold dust using a small brush and cookie cutters.
