Festive Fudgy Mince Pie Brownies
Ingredients
Wet mix
- 2/3 cup apple puree
- 170g dark chocolate, melted
- 2 chia or flax eggs
- 1/2 cup coconut sugar
- 3 tbsp mylk of choice (I used Rebel Kitchen chocolate milk)
- 1 tsp vanilla extract
Dry mix
- 1/2 cup spelt flour (wholegrain or white)
- 1/2 cup oat flour
- 2.5 tbsp cacao powder
- 1/2 tsp baking powder
- Pinch salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
Add-ins
- 400g mince pie filling (I used @meridianfoods Mince Pie Filling)
- 1/2 cup walnuts, chopped
Preparation
Preheat oven to 180°C
Mix together the wet ingredients in a bowl
In a separate bowl, mix together the dry ingredients
Combine the wet and dry mixtures until just mixed
Fold in the mince pie filling and chopped walnuts
Pour the batter into a prepared tray and bake for 20-25 minutes or until set
Allow the brownies to cool
Decorate by painting shapes with edible gold dust using a small brush and cookie cutters.
