Hearty Creamy Butternut Squash Pasta with Sage
Ingredients
- 2tb olive oil
- 2tb sage
- 4 dried tomatoes
- 3 big tomatoes
- 3 cups butternut squash
- 1 onion
- 2 garlic cloves
- Red pepper
- Salt, black pepper
- 2 cups vegetable broth
- 1/2 cups soy cream
- 350g of linguine
Preparation
Peel and chop the butternut
Chop the garlic
Heat up oil in a pan
Add the sage and let it get crispy
Add sage to a bowl and sprinkle salt on top
Chop the onion, tomatoes and dry tomatoes
Add the squash, onion, dry tomatoes, tomatoes, garlic and a bit of red pepper to a pan with oil
Cook for about 10 minutes
Add the vegetable broth
Bring the mixture to boil
Then reduce the heat and let it all simmer for about 20 minutes
Cook your pasta (keep a cup of the pasta water)
Let the squash mix cool down and blend all together until smooth
Season with salt and pepper
Put the blended mix back to the pan and add the cup of pasta water, the pasta and the soy cream
Cook for about 2 minutes
Serve the pasta with the crunchy sage on top
