Homemade Matcha Boba Tea

Ingredients

  • 1/2 cup (90g) tapioca pearls
  • 1 tablespoon sugar
  • 1-2 teaspoons matcha powder
  • 600ml soy milk

Preparation

  1. Bring a pan of water to a boil, add the tapioca pearls, and simmer for 2-3 minutes, then turn off the heat and let them cook for another 3 minutes before plunging into cold water for 30 seconds

  2. Drain the tapioca and mix it with sugar in a bowl; let it sit for 5 minutes while whisking the matcha powder with a bit of hot water

  3. Divide the tapioca between two glasses, pour the soy milk over it, and then pour the matcha mixture on top
