Matcha Zucchini Oatmeal

Ingredients

  • 2/3 cup oats
  • 1 1/2 cup soy milk
  • 1 cup shredded zucchini
  • 1 tbsp flax
  • 1 tsp matcha powder
  • 1-2 tbsp date syrup

Toppings

  • Banana
  • Coconut yogurt
  • Peanut butter
  • Matcha bites
  • Shredded coconut

Preparation

  1. Combine all main ingredients in a saucepan

  2. Cook over medium heat, stirring occasionally, until oats are soft and mixture thickens, about 5-10 minutes

  3. Serve in a bowl and add desired toppings
