Mushroom Stroganoff with Wholewheat Quinoa, Roasted Veg and Tofu
Ingredients
- red onion and cauliflower
- courgette
- salt
- garlic powder and mixed herbs
Preparation
Roasted veg: we had courgette, red onion and cauliflower
Prep your veg and cut into bite size pieces
Spray with oil and toss in salt, garlic powder and mixed herbs
Roast at 180° for 20-30 mins
