Mushroom Stroganoff with Wholewheat Quinoa, Roasted Veg and Tofu

Ingredients

  • red onion and cauliflower
  • courgette
  • salt
  • garlic powder and mixed herbs

Preparation

  1. Roasted veg: we had courgette, red onion and cauliflower

  2. Prep your veg and cut into bite size pieces

  3. Spray with oil and toss in salt, garlic powder and mixed herbs

  4. Roast at 180° for 20-30 mins

  5. My sis and i had ours with a bit of the sesame tofu from @taifuntofu
