Peri Peri Vegan Chicken Fillets with Sweet Potato Mash and Vegetables

Ingredients

  • 2 Aldi peri peri vegan chicken fillets (made from soya and seitan)
  • Sweet potatoes
  • Sea salt
  • Black pepper
  • Red onion
  • Garlic
  • Peas
  • Sweetcorn

Preparation

  1. Cook the vegan chicken fillets according to package instructions or pan-fry until heated through.

  2. Boil sweet potatoes with skins on until tender, then mash with sea salt and black pepper.

  3. Sauté the mixed vegetables including red onion, garlic, peas, and sweetcorn in a pan until softened.

  4. Serve the peri peri fillets alongside the sweet potato mash and sautéed vegetables.
