Simple Roasted Tomato Soup

Ingredients

  • 1 kg cherry tomatoes
  • 1 yellow onion, chopped
  • 3 garlic cloves, crushed
  • 3 tablespoons balsamic vinegar (optional)
  • 3 cups of water
  • 1 tablespoon dried rosemary
  • 1 tablespoon olive oil
  • 1 cube vegetable stock (optional)
  • Salt and pepper to taste

Preparation

  1. Mix all ingredients except vinegar, vegetable stock and water in a baking pan.

  2. Bake at 200 degrees for 30 minutes. Then turn on the broiler from the top and bake for 10 minutes or until the tomato starts to char a bit.

  3. Place everything in a pot and add the remaining ingredients.

  4. Blend everything using a stick blender.

  5. Bring to a boil then simmer for 10 minutes.

  6. Serve with grilled cheese sandwiches and enjoy.

Tips

  1. Use tomatoes still attached to the vine to enhance their flavor and ripening.
