Stuffed Sweet Potatoes with Savory Fillings
Ingredients
- Sweet potatoes
- Black beans or chickpeas
- Taco spice
- Cocktail tomatoes
- Sweet corn
- Pickled onion or red onion
- Guacamole or avocado slices
- Roasted sesame seeds
- Nutritional yeast
- Hummus or salsa or avocado-lime-cilantro dressing
Preparation
Wash the sweet potatoes.
Poke holes in them with a fork to help them bake evenly.
Bake in the oven at 220°C for 40-45 minutes, turning over halfway through the cooking time.
Prepare the fillings while the sweet potatoes are baking.
Once baked, slice open the sweet potatoes and allow them to cool slightly.
Add the desired fillings and serve.
Tips
You can bake the sweet potatoes in the microwave for about 8-10 minutes as an alternative, though they won't caramelize as well as in the oven.
For a sweet version, try fillings like cinnamon, banana, berries, and nut butter.
