Vegan Gingerbread Cookies
Ingredients
- 250 gm / 2 cup all purpose flour or gf flour
- 50 gm - 100 gm / 1/4 - 1/2 cup coconut sugar
- 1 tsp instant yeast
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 2 tbsp cocoa powder
- 1 1/2 tsp cinnamon
- 1 1/2 tsp ginger
- 1/2 tsp cardamom
- 1/4 tsp nutmeg
- 1/8 tsp ground cloves
- 1/4 tsp sea salt
- 50-60 ml / 1/4 cup melted coconut oil
- 60 ml / 1/4 cup smooth applesauce
- 120 ml / 1/2 cup maple syrup
- for icing:
- 125 g / 1 cup icing sugar + water
Preparation
Mix dry ingredients together
Mix wet ingredients together in another bowl
Stir wet ingredients into dry ones until loosely combined then knead the dough gently together
Divide the dough in half & refrigerate it for 30 minutes
Before taking the dough out of fridge , set the oven to 175 c or 350 F & line 2 baking tray with baking paper
After getting the dough out of fridge, give a few minutes to bring it to room temperature, rolled it on a floured surface , roll the dough out thick about 5 mm & cut the cookies out of it with cookies cutter
Bake the large cookies for 9-10 minutes, & bake the small cookies for 7-8 minutes
Decorate your cookies with icing sugar ( l prefer my cookies without icing)
